- 4tbsp vegetable oil
- 100g liver, diced
- 150g king prawns, peeled and deveined
- 1 medium onion sliced
- 4 garlic cloves, minced
- 1 carrot, grated
- ½ green pepper, diced
- 50g peas
- 50g sweetcorn
- ½tsp chilli flakes
- ½tsp dried thyme
- 1tsp ground black pepper
- 1tsp curry powder
- 2 teaspoon chicken bouillon powder
- 2 pouches Varo Jollof Rice
Instructions
- Heat 1 teaspoon of oil in the pan; add shrimp, lightly season with salt. Sauté until just cooked through. Remove and keep warm
- Next add another tablespoon of oil, let it heat up, then add the liver, lightly season with salt and pepper, quickly stir fry for about 2 minutes. Remove and add to the cooked prawns and keep warm.
- Then add the remaining oil to the pan, followed by onions, garlic, carrots, green pepper, peas, sweetcorn, chilli flakes, thyme, black pepper, curry powder, and chicken bouillon powder. Stir until fragrant for about 2 minutes.
- Add the Jollof rice, liver, and shrimp to the pan. Stir until everything has been fully combined. Adjust seasoning salt, pepper if necessary.
- Garnish with sliced spring onion and serve
