Make Spicy Vegan Greek Salad with Varo Jollof Rice

Ingredients:
- 1 small cucumber, peeled and chopped
- 1 small red onion, thinly sliced
- 1 large ripe tomato, chopped
- 1 green bell pepper, seeded and chopped
- 1/2 cup kalamata olives, pitted
- 1/2 cup vegan feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint leaves
- 1/4 cup extra-virgin olive oil
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste

 

Instructions
1. Mix cucumber, red onion, red bell pepper, and tomatoes in a large bowl
2. Add olives, parsley, and mint. Gently mix
3. Whisk together olive oil, red wine vinegar, garlic, salt, and pepper in a small bowl
4. Pour the zesty dressing over the salad, toss gently to coat
