RED PAPRIKA SOUP WITH VARO JOLLOF SAUCE

Red Paprika Soup is a hot broth with a tangy yet slightly sweet flavour, best served with a chunky slice of sourdough bread. It can also be prepared slightly thicker and served as a curry with your favourite protein. Our Jollof sauce gives it that perfect flavour by adding the necessary tanginess and spice, making it the perfect winter-warmer.

Enjoy this hearty paprika, pepper and sweet potato soup as a starter, or for lunch on a cold winter's day.

Ingredients

  • 100g Sweet Potato
  • 70g Red Pepper
  • 50g Red Onion
  • 1 no. Garlic Clove
  • 200ml Coconut Milk
  • Water (as required)
  • 40ml Vegetable oil
  • Salt (to taste)
  • Black Pepper (to taste)
  • 5ml Marple Syrup/Honey
  • Parsley (to garnish)
  • 20ml Jollof Sauce (Medium)

Instructions

1. Heat oven to 190C/170C

2. Roughly dice the sweet potato, red peppers, onions and garlic. Lay them out on a baking tray. Sprinkle over with salt and black pepper, then drizzle with oil. Toss together and roast for 30 mins or until brown.

3. Blend the vegetables and empty it into a saucepan.

4. Add coconut milk, water, Jollof Sauce (medium) and maple syrup. Heat until piping hot. Adjust the consistency of the soup as required with water and taste for desired heat level. Add more Jollof Sauce if you want it hotter

5. Garnish with parsley and serve hot.
